Lemon Almond Loaf

Some recipes don’t need to be complicated to feel special. This Lemon Almond Loaf is one of those — soft, lightly moist, and filled with fresh citrus flavour that tastes clean, not sugary. It’s the kind of bake you make once and then quietly add to your regular rotation.

Sweetened with our Lemon Stevia Syrup, this loaf delivers that classic lemony brightness without refined sugar, making it perfect for everyday baking, afternoon tea, or a lighter dessert that still feels comforting.

Why You’ll Love This Recipe

  • Naturally sweetened with zero sugar
  • Bright lemon flavour without bitterness
  • Soft, tender crumb thanks to almond flour
  • Easy to make in one bowl
  • Perfect for breakfast, snack, or dessert

Ingredients (Makes 1 loaf)

  • 1 ½ cups almond flour
  • ½ cup all-purpose flour (or oat flour for a heartier texture)
  • 2 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs, room temperature
  • ¼ cup neutral oil (avocado or light olive oil work well)
  • ⅓ cup plain Greek yogurt or dairy-free yogurt
  • 3–4 tbsp SweetUnion Lemon Stevia Syrup (adjust to taste)
  • Zest of 1 lemon
  • 1 tsp vanilla extract

How to Make It

1. Prep the Oven

Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.

2. Mix the Dry Ingredients

In a bowl, whisk together almond flour, flour, baking powder, and salt. Set aside.

3. Whisk the Wet Ingredients

In a separate bowl, whisk eggs, oil, yogurt, SweetUnion Lemon Stevia Syrup, lemon zest, and vanilla until smooth and well combined.

4. Combine

Add the dry ingredients to the wet mixture and gently fold until just combined. Don’t overmix — this keeps the loaf soft.

5. Bake

Pour batter into the prepared pan and smooth the top.
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool & Glaze

Let cool in the pan for 10 minutes, then transfer to a rack.
